WebI might catch flack for this, but after having tried a number of different dough proofing times, I find that 1-day dough always turns out the best. For me, it rises the best in the oven, is fluffiest, and has great leoparding. I still like trying new methods, but 16-17 hour times are my personal sweet spot.
